This is now a family favorite. I love the way the roasting concentrates the beets’ sweetness.
Preheat oven to 400 degrees.
Wash and chop some beets into 3?4 inch chunks (I don’t bother to peel them, but you could after they’re cooked if you want.).
Toss with olive oil and salt and pepper.
Spread them on a cookie sheet (one layer deep only).
Roast for 15 minutes then stir and continue roasting until tender (about 35-40 minutes).
You can also mix in chunks of carrots and potatoes for a nice mix of roasted vegetables.
