What you’ll need:
1?4 cup sweet onion, diced
1 tablespoon olive oil
Salt and pepper to taste
4 boneless chicken breasts
1 cup Allagash White Beer (or try Allagash Tripel for stronger flavor)
1?4 cup Maine honey
1 tablespoon dried thyme
What to do:
Heat olive oil in cast-iron frying pan or non-stick pan over medium-high heat.
Season chicken breasts with salt and pepper and sear until golden brown, 3-4 minutes per side.
Remove chicken from pan and set aside. Cook diced onion in same pan over medium heat until soft and tender, about 5 minutes. Return chicken breasts to pan and return heat to medium-high. Whisk together beer, honey and thyme in a bowl. Pour over chicken breasts and bring to a simmer. Lower heat to remain at simmer and cook, turning chicken several times to fully coat. Cook until liquid has thickened and reduced and chicken is cooked through, about 5 minutes. Serve with rice or baked sweet potato.
Leftovers make a great addition to salad or as a base for a wrap for lunch.
