This recipe came from Rochelle Murray, a member of our crew and fellow squash enthusiast. The leeks really highlight the sweetness of the squash.
Preheat oven to 375 degrees.
Remove the seeds and chop a medium delicata squash into 1?2-inch cubes, leaving the skin on.
Also coarsely chop 1 leek, 2 cloves of garlic and 1 red pepper.
In a medium casserole dish drizzle some olive oil.
Toss all the ingredients and add salt and black pepper and some crushed red pepper flakes if you like the spiciness.
Bake uncovered for 15 minutes, then toss with tongs and bake until fork tender. The skin of the squash becomes chewy and delicious.You could substitute other kinds of squashes: Sweet dumpling works about the same skin and all. If you peel and dice butternut or acorn, those would also work in a pinch.
