Apple Fig Jam Tart Recipe

3 large or 4 medium Cortland apples, sliced

5 tablespoons fig jam ?(Mountain Fruit Co.’s Fig ?Galaxy is excellent)

2 tablespoons sugar

2 tablespoons melted butter

4 teaspoons honey

1 egg beaten and mixed with a teaspoon of water

Pie dough for single pastry

Lay pie dough in pie pan allowing excess dough to hang over the sides.

Trim dough if necessary (dough should be almost flush with the edge of the pie plate). Spread the fig jam evenly over the bottom of the pie dough. Arrange apples neatly in a circular pattern over jam.

Overlapping the apples is fine. Sprinkle apples with sugar then drizzle with butter. Fold dough edges over filling so that the dough covers some of the filling, but not all. Brush the crust with the egg mixture. Bake at 350 for 35-40 minutes until crust is golden and apples are cooked. Allow to cool slightly (5 minutes) and then drizzle the filling with the honey. Allow to cool and then enjoy.
